Bello Burger and Homemade Pesto Mayo

Ingredients
• 4 mushrooms
• 4 whole grain rolls32 red bell peppers
• 4 lettuce leaves
• 2 teaspoon smoked paprika
• 5 tablespoon olive oil
FOR PESTO MAYO:
• 3 teaspoon parmesan cheese
• Handful basil leaves
• 25g pine nuts
• 1 teaspoon olive oil
• 5 tablespoon mayo
• 3 teaspoon parmesan cheese

Preparation Method
1. First Preheat the BBQ, grill or a griddle pan. In a small bowl, mix olive oil and smoked,paprika and drizzle over the mushrooms. Grill till tender.
2. Cut off the top of the bell pepper and remove the seeds. Cut in half, brush with olive oil and grill till tender. In a blender, mix all pesto ingredients (except the mayo) till smooth. Add mayo. Cut the rolls and grill if you like them warm. Arrange lettuce, mushroom and grilled red bell pepper on the roll.
