Chinese Noodles - Recipe ( With Eggs & Vegetables )

:: This recipe is Masala flavored Shrimp/Prawn Noodles.But you can add chicken or
meat instead of Shrimp ::

      Ingredients
 • 1 packet (10 -12 oz) Chinese Egg Noodles
 • 1/2 lb Lightly Cooked Shrimp (peeled & devined), 
    (But you can also use Uncooked Shrimp)
 • 2 large Finely Diced Onions
 • 1 cup Thinly sliced Carrots 
 • 1 Cup Diagonally Sliced Beans
 • 2 Cup Diagonally Sliced Snap Peas
 • 1 teaspoon Turmeric Powder
 • 2 tablespoon lemon juice
 • Salt – to taste
 • 4 tablespoon Oil 
 • White/Black Pepper
 • 1 bunch Chopped Spring Onions,
    or Green Onions/Scallions
 • 1/2 cup Bean Sprouts
 • 3 Eggs
 • 1 teaspoon Garlic Powder
 •  1 tablespoon Chicken Masala Powder 
   ( I Used South Indian Masala ) 
   FOR MARINATING THE SHRIMP:
 • 3 tablespoon Soy sauce 
 • 2 tablespoon Ginger garlic Paste
 • 1 tablespoon Chilly Garlic Sauce
 • 1 tablespoon Cornstarch 
   FOR SAUCE:
 • 4 tablespoon Dark Soy Sauce
 • 2 tablespoon Tomato Ketchup
 • 1 tablespoon Red/Green Chilly Sauce
 • 2 teaspoon Brown Sugar

       Preparation Method
1. First Wash and clean the shrimp. Soak it in water along with 1 tablespoon of lemon 
  juice,for 5 minutes. Drain and marinate with the above ingredients and refrigerate it 
  for atleast 30 minutes and Boil the Egg noodles according to the instructions on the 
  packet.Drain and rinse the noodles with cold water and  Keep aside.

2. Now Beat the eggs with little salt and pepper and keep aside and after Heat 1 ,
  tablespoon of oil in a wok and throw in the marinated shrimp. Stir fry on high heat for 
  5 minutes and Remove the shrimp and keep aside.

3. Now Heat 2 more tablespoon of oil in the same wok and saute onions until translucent
  Add carrots, beans and snap peas to the wok. Stir fry on medium-high heat for around 
  5-7 minutes till it almost cooked but crispy. Season with salt and pepper. Reduce heat 
  and add chicken masala powder, turmeric powder, onion powder and garlic powder.
  Stir fry for a minute.

4. Push the veggies to the sides of the wok and add the beaten eggs. Allow the eggs to
  set and then scramble thoroughly and Throw in the previously stir fried shrimp to the 
  wok Mix all the ingredients for the sauce and pour it into the wok. Saute for 2 minutes
  and Add the noodles, bean sprouts and spring onions. Toss everything well for 3-4 minutes
  on medium high heat until the sauces have been absorbed by the noodles.

:: Tips:If you are using Uncooked Shrimp,you will have to stir fry it until it turns pink ::
