Masala Dosa ( Real South Indian Taste )

:: The Masala Dosa has become one of my favorites ever since when I was a little kid.
         Especially at breakfast time and evening time,and Now
This recipe is from my Daughter’s recipe collection in 2011 ::





{ Preparation & Cooking Time : 20 Min }
    For Soaking : 10 Hours Before Making
         Difficulty : Average
        Meal Type : Dosa 
              Serves : 1-2

   Ingredients

   FOR DOSA:
 • 1 cup - Rice flour
 • 1 cup - Maida
 • ¾ cup - Urad dal. • ¼ cup - Chana dal
 • Salt to Taste 
   FOR MASALA:
 • 4 (medium)  - Potatoes.
 •  Onion - 2 (medium-sliced)
 • 2 (medium-sliced) - Green chillies
 • 1 teaspoon (chopped) - Ginger.
 •  1 teaspoon - Turmeric powder.
 • ½ cup  - Water.
 • 2 pinches - Asafetida.
 • ½ teaspoon - Mustard seeds.
 •  ¼ teaspoon - Cumin seeds.
 •  ½ teaspoon - Chana dal.
 •  ½ teaspoon - Urad dal.
 • Coriander leaves
 • Salt to taste
 • Oil


    :: Making Method For Masala ::
1. First Boil the potatoes and (cut into half) with little salt and ¼ teaspoon turmeric
  powder. And After boiling, peel the skin and chop them into small pieces.
2. Now Heat the oil in a pan and add the mustard seeds, urad dal, cumin seeds, 

  chana dal, asafetida. When the mustard seeds start to crackle, add the onion and fry till
  they turn golden color. and Add the green chilies and ginger,Fry That.Now Add ½ cup of
  water. To the water, add salt (remember, I have added a little salt earlier) and,
  ¾ teaspoon. turmeric powder, Let it boil.
3. Now add the boiled potatoes and mix well. While mixing, mash it in between.

    Finally add the coriander leaves and remove from heat.

    :: Making Method for dosa ::
4. First Soak dals for 5 hours and Grind them. Now Add rice flour and maida at the,
  final stage by adding required water.and Grind. Now Add salt . Mix well. 
  Let the batter ferment overnight.
5. Heat a non-stick dosa pan ( tawa ).and Take a ladle full of batter and spread it thin,
  in a circle or oval shape. Actually for masala dosa, they never flip the dosa in restaurants.
  But I flipped and cooked on the other side for better taste.
6. Fill the required masala (as per your taste) in the centre of the dosa and roll carefully.
       :: Serve with your favorite chutney and sambar or Mutton Curry ::
   : Remember :
:: The dosa in the Second picture was cooked on medium heat ::
:: The dosa in the First picture was cooked when the pan was 'stremely hot ::
:: Sprinkle little water on the griddle and continue with the remaining batter ::
