Sweet Corn Soup With Chicken ( Chinese Style )

Serves : 1-2
• 450 ml chicken stock
• 1/2 chicken breast boiled and cut into strips
• 200g creamed sweetcorn (approx. 1/2 tin)
• 2-3 tablespoon cornflour mixture (or until thickened)
• 1 egg beaten
• 1 teaspoon salt
:: FIRST PREPARE THE STOCK ::
1. Boil the chicken breast. Pour some cold water into a pan enough to cover the chicken
and place the chicken breast inside. On medium heat, begin simmering the chicken in
the pan for about 8 minutes. Once cooked (you can check by making a cut into the
breast, if it is pink it needs a minute or two longer), cut the chicken into strips and place
it in a dish to the side. Then begin the cooking instructions. Alternatively you could use
leftover chicken from your roast.
Prepare cornflour mixture.
2. Pour chicken stock into pan on medium heat. Add in chicken strips and the creamed
sweetcorn. Then add 1/2 teaspoon of salt, or to taste.
3. As the stock starts to simmer slightly, gradually add in the cornflour mixture and stir
until thickened. When it boils, gradually pour in the beaten egg whilst stirring constantly.
Continue boiling for a minute and serve.
