SWEET PONGAL Recipe

:: festival season has begun in India. NAVARATRIDIWALI is here and its time for some special festival sweets. The first day of Navaratri has Sweet Pongal as an offering to Goddess Durga ::

           Difficulty : Easy

                Serves : 2-4

  Ingredients
 • 1 cup Rice           
 • 1/4 cup  Moongdal
 • 2 ½ cup Jaggery
 • 1 cup Milk
 • 4 tablespoon Ghee
 • 13 Raisins
 • 12 Cashews
 • ½  teaspoon Cardamom powder 


      Preparation Method
1. First Pre Heat ghee in a Pan (kadai) and Fry cashew and raisins to golden color.
  Then Remove and keep aside.

2. Now Roast moongdal in a dry pan, till good aroma comes and Pressure cook rice and
  moongdal together with 1 cup milk and 2 cups of water and Smash the contents.

3. Then Melt jaggery by boiling it in little water and take thick jaggery water and Mix this
  with smashed rice. Combine well and Add powdered cardamom, ghee roasted cashew
  and raisins. Stir well by adding warm ghee, until everything blends together.
  Serve hot with crispy Vada.

MY NOTE: You can use sugar instead of jaggery but the flavor of sweet  
                pongal is best when sweetened with iron rich jaggery.
