Ingredients
• 50 grams Penne Pasta.
• 3 teaspoon Olive Oil.
• 2 Onion (finely chopped).
• 1 cup Corn Kernels.
• 1 Zucchini (sliced).
• 1 Carrot (sliced).
• 1 head Broccoli (cut into florets).
• 1/3 cup Cornflour
• 350 grams can (Crushed Tomatoes).
• 1 1/2 cups Cheddar Cheese (coarsely grated).
Preparation Method
1. First Preheat oven to 200°C.and Cook pasta according to packet directions. Drain.
Heat oil in large saucepan over medium heat. Add onion, corn, zucchini, carrot and
broccoli.
2. Now Cook, stirring, for 5 minutes, or until vegetables soften. Stir in canned tomatoes.
Mix cornflour with small amount of water. Then Place over medium heat and cook,
stirring, for 2 minutes, or until sauce thickens and Add pasta, vegetable mixture and
½ cup cheese to sauce. Spoon mixture into an ovenproof dish. Sprinkle remaining
cheese on top. Bake for 40 minutes, or until golden.
Serve with mixed salad leaves.
