Zucchini With Spinach Vegetarian Soup

Ingredients
• 4 tablespoon vegetable oil
• 2 ½ cups chopped potatoes into cubes
• 2 ½ cups chopped zucchini
• 4 cups vegetable broth or water
• 4 cups fresh spinach leaves (pack frozen)
• 1 cup cilantro, finely chopped
• 1 lemon
• 1 teaspoon salt
Preparation Method
1. In a pot heat the oil over medium heat. Then fry the potatoes and zucchini until golden brown and add broth (or water) and salt, bring to a boil and cook until potatoes are tender, about 10-15 minutes.
2. Now place the pot in spinach and coriander. Allow the soup to cool and whisk in a blender to puree the state with the juice of one lemon. Add the vegetable oil and pour into cups. Serve with toasted bread or crackers.
