Penne Pasta with Sweet Potato Recipe

Pasta is not fattening! But it is yummy and even healthier when combined with sweet potato, cherry tomatoes, capsicum and basil, as it has been in this Penne Pasta with Sweet Potato recipe.

This recipe is quite a quick and easy one to prepare. Any sort of pasta you prefer can be used including pasta spirals or bowties.

One serve of this recipe represents 24% of the recommended daily energy intake of an average person.


This recipe is low fat, sugar and sodium and a good source of protein.

Ingredients
• 2 cups penne pasta
• 1 sweet potato (aka Kumera and Yams), cut into chunks
• 1tbsp olive oil
• Cooking spray
• 3 slices short cut bacon
• 1/2 red capsicum, sliced
• 2 cloves garlic
• 6 button mushrooms sliced
• 1/2 large onoin sliced
• 8-10 cherry tomatoes halved
• sprinkle herbs
• 15-20 fresh basil leaves, hand torn
• 1 cup water (reserved pasta water)
• Cracked Pepper



   Preparation Method 
1. First preheat oven to 180C (350F)

2. Place sweet potato on tray,  and halved cherry tomatoes, spray with cooking spray and bake for 20-25 mins.

3. Cook pasta in large pan of boiling water, uncovered, until just tender; drain.

4. In a large non stick frying pan, heat olive oil and cook bacon, onion and capsicum for around 5-8 mins. 

5. Now add sliced mushrooms and sautee a further 5 mins.

6. Add baked sweet potato and tomatoes, and pasta with 1 cup of water. Stir until incorporated, add torn basil leaves, cracked pepper.

7. Serve immediately with some parmesan cheese if desired.
