Wholemeal Muesli Pancakes with Cinnamon Apples Recipe

Ingredients
• 3/4 Cup Wholemeal Self Raising flour
• 1/2 cup muesli (we used Carmens Brand 13%Fat)
• 2 egg
• 3/4 cup reduced fat milk
• 2 granny smith apples, peeled and diced
• 2 teaspoons sugar
• 1/4 cup water
• Sprinkle of cinnamon
• 1 small tub Vanilla Yoghurt
• Cooking Spray
Preparation Method
1. Combine flour and museli in bowl and stir to combine. Mix together egg and milk in a jug and stir well to combine.
2. Add to flour and mix well until mixture is well combined. Set aside in fridge.
Place apples in a small pot with water, sugar and cinnamon and simmer for 5 mins until apples have softened, but not too soft.
3. Heat frying pan over medium – high heat. Spray pan with cooking spray and cook pancakes one at a time, until golden brown each side.
5. Serve immediately with apple compote and vanilla yoghurt.
