Wholemeal Muesli Pancakes with Cinnamon Apples Recipe

Pancakes can be a wonderful breakfast dish because they are quick and simple to prepare and they keep us feeling full for hours.This pancake recipe includes the wholesome goodness of muesli and are lovely served with cinnamon apples or other stewed fruit, such as plums, with yoghurt.They can also double as a great snack or healthy dessertOne serve of this recipe represents 26% of the recommended daily energy intake of an average person.
This recipe is low fat, low sodium and a good source of protein.

  Ingredients
• 3/4 Cup Wholemeal Self Raising flour
• 1/2 cup muesli (we used Carmens Brand 13%Fat)
• 2 egg
• 3/4 cup reduced fat milk
• 2 granny smith apples, peeled and diced
• 2 teaspoons sugar
• 1/4 cup water
• Sprinkle of cinnamon
• 1 small tub Vanilla Yoghurt
• Cooking Spray

   Preparation Method
1. Combine flour and museli in bowl and stir to combine. Mix together egg and milk in a jug and stir well to combine.

2. Add to flour and mix well until mixture is well combined. Set aside in fridge.
Place apples in a small pot with water, sugar and cinnamon and simmer for 5 mins until apples have softened, but not too soft.

3. Heat frying pan over medium – high heat. Spray pan with cooking spray and cook pancakes one at a time, until golden brown each side.

5. Serve immediately with apple compote and vanilla yoghurt.
